Dish of the Day: Catfish and Yellow Squash
Catfish and yellow squash.
I often talk about how it’s not always about intricate, multi-ingredient recipes. Sometimes it’s about tossing a fish fillet and some yellow squash in a pan.
On my last trip to the grocery store, I bought a catfish fillet, weighing in at just under a half pound. I had some fresh yellow squash on hand at home. So, I brought the fish home, put it in a pan with some water, chopped up the yellow squash, and about 15 minutes later, my dog had a healthy and delicious lunch ready to go.
